Barbados Blackened Fish

4 x Salmon fillets (or other fish fillets)
4 tsp Red Hill Spice Girls HOT BARBADOS
1 tbsp oil
1 tbsp butter
Lemon or lime wedges

Prepare fish fillets: pat dry with paper towel, rub on a little oil and coat with Red Hill Spice Girls HOT BARBADOS rub.
Heat frypan and add oil and butter.
Panfry fish fillets until the coating is browned (or blackened).
Cover the fish with a lid on low heat if further cooking is required.
Drizzle with lime juice.

Serve with:
lemon or lime wedges, green salad, crusty bread and a white wine.
