Mediterranean Spiced Roast Lamb

Ingredients:
Lamb leg for roasting
2 tbsp Red Hill Spice Girls EASTERN MEDITERRANEAN SPICE
2 tbsp olive oil
Rosemary sprigs
3 garlic cloves unpeeled
Vegetables to roast ie: potato, sweet potato, carrots, pumpkin

Rub leg of lamb with oil and coat with EASTERN MEDITERRANEAN SPICE.
Preheat oven to 200deg
Bake in oven for 15 minutes on high and lower to 180deg and roast until cooked.
Cooking time will depend on the size of the leg of lamb.
Add vegetables to the roasting pan allowing 1 hour of cooking time.

Serve with peas, beans, gravy.

Make a warm vegetable salad
Mixing roasted vegetables with
2 ripe Tomatoes, thickly cut
1 red onion, slices
Parsley and mint, roughly chopped
Top with Fetta cheese and drizzle with olive oil.
